I found some of the most gorgeous tomatoes at the farmer’s market this weekend. When combined with avocado, or other healthy fats, it’s easier for the body to absorb the antioxidant lycopene in the toms. Last night we tossed some diced tomato with zucchini, olive oil, and shaved Parmesan. I’m considering this sandwich for lunch….
